Do Vitamin C and Benzoate preservatives react to form carcinogenic benzene?
In 2005 a study was done which detected trace amounts of benzene in 9 popular soft drinks. Most of the sodas tested had levels lower than what you would find acceptable in drinking water, but a few had levels higher than what is considered safe for consumption. This study sparked worry about combining ascorbic acid with benzoate preservatives, and increased public interest in future studies to investigate the reaction.
